Millet and bean burgers
One of the culinary success stories of this summer, are these easy millet & bean vegan burgers made with few, simple ingredients. By now you should already have guessed at least two of them!
Millet grains resemble quinoa, or couscous…
I have served these burgers with different side-dishes, ranging from Asian style caramelised onions, to Greek-inspired cauliflower skordalia, both potential subjects of future posts.
For approx. 5 big/10 small burgers you will need:
100 ml of millet grains
230 g cooked white beans
2 tbsp oil
4 pieces (halves) of sun-dried tomatoes, finely cut
2 tsp dry mint
1 tsp dry dill
1 tsp parsley
1/2 tsp turmeric
1 tsp salt
Preparation:
- Wash and strain the millet. Place it in a cooking pot with 300 ml of water and a hint of salt. Bring to boil. Let the millet soft-boil until it is done and all the liquid has evaporated, or turn off the stove, place a towel between the pot and the lid and let the millet expand until all the water has been absorbed. Set aside and let cool.
- Process a bit less than half of the millet with the rest of the ingredients, using a (stick) blender. Mix in the remaining millet by hand.
- Heat up a greased skillet. Take spoonfuls of the mixture with a tablespoon and form patties with your hands. Fry the burgers for about 3 min on each side until golden.
