Vegan carrot burgers

I may not have been posting recipes on the blog for a long time, I have however been making batch after batch of these simple vegan and glutenfree carrot burgers that I am now sharing with you.

It all started with a variation of the squash patty recipe published here, but the carrot burgers soon morphed into an entity of their own.  They are simple to make, baked in the oven and seasoned with spices similar to those used for falafel. The mix contains chickpea flour which together with the sesame seeds stands for the protein content of these vegan burgers.

They go very nicely together with a fresh green salad, but can of course also be combined with a bun and some kind of fries for a more classic combination. On the picture they are served with oven-baked suede strips.

Ingredients
  1. 350 g carrots
  2. 100 g onion
  3. 1 big handful of parsley
  4. 60 g chickpea flour
  5. 3-4 garlic cloves
  6. 10 g coconut flakes
  7. 10 g sesame seeds
  8. 1 tsp cumin seeds
  9. 1/2 tsp rock salt
  10. 1 tsp black pepper grains
  11. 1 pinch chiliflakes
  12. 1 pinch dry mint
  13. 50 ml water
  14. 2 tbsp oil
Instructions
  1. Grind the cumin, rock salt and black pepper in a mortar
  2. Process the sesame and coconut in a blender, set aside
  3. Process the peeled carrots, onion, parsley, and garlic cloves
  4. Place the carrot mix, spices, coconut and sesame in a bowl
  5. Sift in the chickpea flour and mix
  6. Add in the 50 ml of water, 2-3 tbsp of oil and let rest for 15 min
  7. Preheat the oven at 200 C (392 F)
  8. Form patties and place them on an oven tray, lined with slightly greased parchment paper
  9. Place the tray on the rack just below the center and bake on one side for 6-7 min or until golden brown
  10. Take the tray out and flip the burgers
  11. Bake on the second side for another 4-5 min or until golden
  12. Take out from the oven and eat immediately or let cool and freeze
