Oven baked celery root

One of the things I cooked during this Christmas break and got hooked on was oven baked celery root.

In fact, this humble, wonderful plant is mentioned in Homer’s Odyssey under the code name selinon says Wikipedia and Google nods in agreement.


Now, I would love to know more about how to spice up an already majestic epos using some wild celery, but in the meantime, I am sharing this recipe…

  1. 1 big celery root or two small ones
  2. 1 big tbsp olive oil and/or butter
  3. 2 big garlic cloves, minced
  4. 1 tsp each of salvia, thyme, basil and a big pinch of chopped parsley
  5. a pinch of rock-salt
  1. wash and peel the celery root(s)
  2. preheat the oven at 175 C (347 F)
  3. fill a pot with water and bring it to a boil
  4. blanch the celery for some minutes until its surface softens and you can quite easily pierce it with a fork
  5. remove the celery from the water and keep the broth
  6. mix the oil/butter with the minced garlic, herbs and salt
  7. divide the celery root(s) in two
  8. slightly grease a deep oven tray
  9. place the flat part of the celery on the tray and cut into it less than halfway through as if you were to slice it thickly
  10. rub the oil/butter mix onto the surface of the celery and place the tray in the oven
  11. when the celery root starts browning, pour some of the celery broth over it and continue baking
  12. repeat the process several times if necessary to keep it from burning and drying out
  13. bake the celery root for about one hour and 20 minutes or so, until it has become golden brown and you can easily slice it with a knife
  1. By baking the celery at a relatively low temperature it will bake nicely and turn golden brown without burning
