For four pancakes you will need:
Half a fair-trade, organic banana
0.5 dl/50 ml rice-milk, or other non-dairy, or dairy alternative
1 tbsp broken flaxseed
1 tbsp desiccated coconut
2 tbsp buckwheat flour
2 dates cut in small pieces
0.5 tsp baking powder
Some grated ginger
Hint of salt
Hint of oil (I use olive oil)
- If you are a planner: mix the ingredients thoroughly in a bowl; place it in the fridge overnight.
- In the morning, add the baking powder and mix again.
- Slightly grease a non-stick pan, spoon up the batter (makes 4 pancakes) and bake for a couple of minutes on both sides at medium heat.
- If you are not too fond of planning, just blend and bake!
Delectable served with carob syrup.
