In my paternal family beets are not just appreciated for the part that grows underground. The leaves and stems are considered as delicacies too and have probably been used in cooking for generations.
Next time you come over a nice leafy bunch of fresh beets, take it home with you.
When you’re alone, separate the stems from the bulbs and wash them thoroughly. Separate the leaves from the stalks and steam them in a pot or pan with a wee of water.
Visually appealing and very gentle with the taste-buds.
